Orzo and Vegetable Salad http://distribution.heinzcookbook.com/RecipeImages/34f37e722b214440951a26991e0ca89b/1 1 min 1 min 1/4 cup Heinz® Apple Cider Vinegar** 1 cup orzo (rice-shaped pasta) 1/4 cup vegetable oil 1 teaspoon Dijon-style mustard 1/2 teaspoon dried basil leaves 1/4 teaspoon salt 1/8 teaspoon pepper 1 cup frozen green peas, thawed 4 green onions, sliced 1/2 cup chopped red bell pepper lettuce cups tomato wedges Cook orzo according to package directions; cool. Combine orzo, peas, onions and bell pepper in large bowl, pour dressing over and toss. Cover; chill several hours or overnight. Serve in lettuce cups; garnish with tomato. Makes 4 servings (about 5 cups)
