Chilled Marinated Vegetable-Rice Salad
Ingredients:
3 tablespoons Heinz® Apple Cider Vinegar
2 tablespoons olive or vegetable oil
2 tablespoons chopped parsley
1/2 teaspoon granulated sugar
1/2 teaspoon salt
1 cup quartered cherry tomatoes
1/2 cup sliced celery
1/3 cup chopped red onion
1/3 cup sliced ripe olives
2 cups cooked white or brown rice, cooled to room temperature
Instructions:
For marinade, combine first five ingredients in a mixing bowl. Add vegetables and olives to marinade and toss to coat. Cover and chill; add rice and toss lightly to combine. Makes 8 servings.

Orzo and Vegetable Salad
Ingredients:
1 cup orzo (rice-shaped pasta)
1/4 cup Heinz® Apple Cider Vinegar
1/4 cup vegetable oil
1 teaspoon Dijon-style mustard
1/2 teaspoon dried basil leaves
1/4 teaspoon salt
1/8 teaspoon pepper
1 cup frozen green peas, thawed
4 green onions, sliced
1/2 cup chopped red bell pepper
Lettuce cups
Tomato wedges
Instructions:
Cook orzo according to package directions; cool. Combine orzo, peas, onions and bell pepper in large bowl, pour dressing over and toss. Cover; chill several hours or overnight. Serve in lettuce cups; garnish with tomato. Makes 4 servings (about 5 cups)
